Spotlight on Chris Richards, Head Chef
Behind the scenes here at Team Stag, Head Chef, Chris Richards, and his team have been squirreling away, hard at work, and putting the finishing touches to the Autumn Menu; there are some terrific dishes coming onto the menu to fit the cooling temperatures and darkening evenings – you won’t be disappointed!
With this in mind, we thought it would be an apt opportunity to get to know Chris a little better and so before service commences, we have taken the opportunity to grab a Hampshire-roasted Mozzo coffee and delicious bacon roll and ask him a few questions…
Describe your perfect day off?
“My perfect day off would consist of spending time at home with the family and would definitely include an early evening out at our local Fez restaurant in Petersfield, with the wife, enjoying a few Raki and efFes draught and a large mezze board… a great way to relax and catch up on the world”.
What is your signature dish?
“A fillet of Surrey beef studded with sweet peppers, wrapped in parma ham and basil served with dauphinoise potatoes, wilted spinach, and a red wine jus”.
If you were to host a dinner party at home, which 3 celebrities would you invite (and why)?
“Love this question! Hands-down number one guest would be David Bowie…why? he is epic and whilst a man of few words, he’s such a legend. I would also invite Stephen Fry because he’s hilarious, intelligent and a great story-teller. That’s it, I wouldn’t want any other guests (other than my wife as co-host). I would be in dinner party heaven!”

“Hate it with a vengeance!”
What was your dream job growing up, have you always wanted to be a chef?
“There’s never been any doubt in what career path I wanted to take, I’ve always wanted to be a chef! I feel so passionately about ingredients, butchery, combining different flavours and textures, the medicinal elements of food etc. I love having artistic license over food and seeing others enjoy it… such a rewarding job!”
What’s your favourite tipple?
“Raki…served over ice”
Where is home?
“Our home resides in Petersfield, but I grew up in Sidmouth, Devon… such wonderful memories growing up beside the sea and love taking the boys back there whenever we get a chance”.
What has been your biggest achievements to date?
“Our two wonderful boys are definitely my biggest achievement – am so very proud of them! I also won a Gold medal in the North of England Cookery Grand Prix and was short-listed for Chef of the Year in the Surrey Life Food & Drink Awards 2016…both of which were defining moments for me”.
…and your next goal to achieve?
“I love Alpha Romeos and would love to open my front door to see an Alfa 4C on my driveway in the near future!”.
